Silken Steamed Egg with Minced Pork
Stock-thinned steamed egg custard finished with seasoned minced pork on top.
Ingredients
About 4 portions.
- 4 eggs
- 1½ cups warm chicken stock
- ½ pound minced pork
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- White pepper
- Sliced scallions
Method
- Season the minced pork with part of the soy sauce, sesame oil, and white pepper.
- Beat the eggs gently without incorporating excessive air.
- Mix the eggs with the warm stock.
- Strain the egg mixture into a shallow heatproof dish.
- Cover the dish tightly with foil or a plate so condensation does not drip into the custard.
- Steam over low heat for 8 minutes.
- Add the seasoned minced pork in small, thin pieces across the surface.
- Cover again and steam for about 2 more minutes, or until the pork is cooked and the egg is barely set.
- Finish with the remaining soy sauce, sesame oil, white pepper, and scallions.
- The final texture should jiggle like soft tofu rather than become firm or porous.
