Silken Steamed Egg with Minced Pork

Stock-thinned steamed egg custard finished with seasoned minced pork on top.

Ingredients

About 4 portions.

  • 4 eggs
  • 1½ cups warm chicken stock
  • ½ pound minced pork
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • White pepper
  • Sliced scallions

Method

  1. Season the minced pork with part of the soy sauce, sesame oil, and white pepper.
  2. Beat the eggs gently without incorporating excessive air.
  3. Mix the eggs with the warm stock.
  4. Strain the egg mixture into a shallow heatproof dish.
  5. Cover the dish tightly with foil or a plate so condensation does not drip into the custard.
  6. Steam over low heat for 8 minutes.
  7. Add the seasoned minced pork in small, thin pieces across the surface.
  8. Cover again and steam for about 2 more minutes, or until the pork is cooked and the egg is barely set.
  9. Finish with the remaining soy sauce, sesame oil, white pepper, and scallions.
  10. The final texture should jiggle like soft tofu rather than become firm or porous.
