Hambāgu
Seared Japanese-style beef patties finished in a ketchup and Worcestershire pan sauce.
Patties
Makes 4 large patties. Total time is about 25-35 minutes.
- 2 pounds ground beef, or a beef-and-pork blend
- 1 onion, very finely minced
- 1 egg
- ½ cup breadcrumbs
- ¼ cup milk
- Salt and black pepper
Sauce
- 3 tablespoons ketchup
- 2 tablespoons Worcestershire sauce
- 1 tablespoon butter
- Splash of stock, optional
Method
- Mix the breadcrumbs and milk.
- Combine the meat, onion, egg, soaked breadcrumbs, salt, and pepper.
- Mix only until cohesive; overmixing makes the patties dense.
- Form four oval patties. Press a shallow indentation into each center.
- Heat a skillet over medium-high heat.
- Sear the patties for 4-5 minutes per side.
- Remove the patties.
- Add the ketchup, Worcestershire sauce, butter, and optional stock to the skillet.
- Stir and simmer until glossy.
- Return the patties and simmer in the sauce for about 5 minutes, until cooked through.
