Fried Egg Tofu with Minced Pork
Pan-fried egg tofu rounds simmered in a mushroom and minced pork sauce.
Ingredients
About 4 portions.
- 2 packages egg tofu, 8 ounces each
- ½ pound ground pork
- 3 dried shiitake mushrooms
- 2¼ cups warm water for soaking the mushrooms
- 1 tablespoon minced ginger
- 3 garlic cloves, minced
- 2 cups strained mushroom soaking liquid
- 2 tablespoons light soy sauce
- ½ tablespoon dark soy sauce
- 2 tablespoons Shaoxing wine
- 1 teaspoon sugar
- 2 tablespoons cornstarch
- 2 tablespoons cold water
- Neutral oil for frying
Method
- Soak the dried mushrooms in 2¼ cups warm water for 2-3 hours.
- Remove the mushrooms, squeeze them gently, and dice them.
- Strain and reserve 2 cups of the soaking liquid.
- Slice the egg tofu into thick rounds.
- Heat oil in a nonstick pan over medium heat.
- Fry the tofu rounds until golden on both sides. Remove carefully.
- Brown the pork.
- Add the mushrooms, ginger, and garlic.
- Add the light soy, dark soy, Shaoxing wine, sugar, and mushroom liquid.
- Simmer for approximately 20 minutes.
- Mix the cornstarch and cold water.
- Stir the slurry into the sauce.
- Add the fried tofu and gently toss or spoon the sauce over it.
- Simmer only long enough to heat the tofu through.
